  1. That is a beautiful plate. It reminds me a lot of Bryan Voltaggio's plating, which is a great compliment (Or I think so anyway). I love the presentation on the charcoal slate!

    What did you gel the gelee with? Can I assume that the soil is using tapioca maltodextrin?

  2. Yeah the peanut butter soil is done with maltodextrin...i gelled the white grape gelee with a mixture of bronze gelatin and agar powder
